  2. Place cabbage in a bowl with salt. Toss with fingers, then set aside for 15 minutes. Squeeze out excess liquid from cabbage using hands.
  3. Place cabbage, mushrooms and remaining Filling ingredients in a bowl. Mix with your hands until well combined.
  4. Place 1 tbsp into a dumpling wrapper and wipe water around the edge of half the wrapper then close and pleat. Look for a video if your not sure of the technique.
  5. I like them fried so I will place them on a baking sheet and into a freezer for a few hours until they are solid. If cooking them down the road you want to remove them and then vacuum seal while they are frozen
  6. Heat your fryer to 350 and place about 8 into the fryer for about 3 minutes. remove them to a cooling rack and allow to cool for about 5 minutes. Add them to a bowl and start to brush your glaze heavily over all the dumplings and set back on the cooling rack. (these must be frozen in order to fry correctly)
  7. I will double glaze the pot stickers so after the first glaze sets I will glaze again
